Seriously the BEST Banana bread ever...and it's healthy

I am a massive fan of the ol Banana Bread. Bananas are my all time favourite fruit, so when they are in a bread form it's a winning combination.

In my constant search of new things to make Poppy for her meals, I discovered this recipe for a healthy banana bread loaf, that I tweaked slightly to my own taste... and it's pretty damn amazing. It's super (get ready for it) moist... and full of flavour! The best part? There is no sugar! What? Liar! No for real! Most banana breads you find are jam packed with sugar and I find it so unnecessary because bananas are sweat enough and with some healthier alternatives, a sugar free loaf can and has been achieved.

So here you go... I am sharing this goodness in a loaf with you for your own enjoyment!

Go, Bake and Eat!

Healthy Banana Bread

Ingredients:

  • 1/3 cup melted coconut oil
  • 1/2 cup Rice Malt Syrup
  • 2 eggs
  • 2 mashes bananas
  • 1/4 cup milk (of your choice)
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon Cinnamon
  • 1 3/4 Cup Flour
So start by preheating your oven to 165C (That's Celsius).

Mix your oil and rice malt syrup together with a whisk.

Whisk in our banana, milk and eggs. Make sure they are well combined.

Then add your baking soda, vanilla, salt, cinnamon and flour. Mix this all together with a spoon. 

One the mixture is well... mixed... pour in into a bread tin. 

You can sprinkle the top with cinnamon, desiccated coconut, crushed walnuts (anything you like really).

Bake for about 30-40 minutes (until you can poke through the centre and it isn't wet inside).

I love eating this bread with either too much butter, or cashew butter. So yum! A great lunch idea for the bubbas or an afternoon snack for you!

(I was going to take a photo of the said Banana bread, but it was eaten very swiftly. So here is a picture of a uni-corn... get it? It's one corn... I know, Classic!)
