Easter Cupcakes

Another holiday has hit us! Easter time is always great because the intake of chocolate hits an all time high...which is just fine by me!

This year I wanted to make a tasty treat in order to celebrate this chocolatey bunny hopping holiday. I decided to make chocolate cupcakes using a recipe from The Hummingbird Bakery recipe book (these guys make super amazingly yummy cupcakes). I chose to making the cupcakes with coconut icing so it tastes bit like a bounty bar (plus I'm obsessed with coconut). For this tasty treat I decided to make the cupcakes into little birds nests, I got the Easter cupcake decorations from Big W and the little eggs on top are the MM's easter eggs (sooo addictive).

If you are thinking of making Easter Egg cupcakes for yourself here is the recipe I used:

-3/4 cup plain flour
-2 1/2 tablespoons cocoa powder
-3/4 cup caster sugar
-1 1/2 tablespoons butter
-1/2 cup milk
-1 egg
1/4 tablespoon vanilla extract.

-1/2 butter (softened)
-4 cups icing sugar
-1 1/2 tablespoons coconut essence
- 1/2 cup desiccated coconut
-5-6 tablespoons milk

  • Start my preheating your oven for 170C
  • Mix together the flour, cocoa, sugar, baking powder salt and butter. Mix with an electric mixer until the mixture becomes a sandy consistency.
  • In a separate bowl whisk together the milk, egg and vanilla extract. 
  • Once combined well mix half the wet mixture into the dry and mix well with the electric mixer. Once you have mixed it for about a minute add in the rest of the wet mixture. Make sure to combine until there are no lumps.
  • Spoon the cupcake mixture into the paper cases so they are all about 2/3 full. 
  • Pop in the oven for 20-25 minutes until they bounce back when they are touched. 
  • Leave on a drying rack to cool down.
  • Once the cupcakes have cooled it's time for the icing!
  • Start by beating the butter until it is nice and creamy. 
  • Add in the icing sugar, coconut essence, desiccated coconut and milk and blend with an electric mixer until it becomes a nice creamy consistency. 
  • Using a icing pipe if you have one or a spoon pop your icing on the cupcakes and then add your little Easter decorations. I added little eggs to make the cupcakes look like a birds nest. Then I added my Happy Easter cupcake signs.
  • Then eat them...this is the most important step!!
