St Patricks Day Cupcakes!

Hi Everyone!
So as most of you might be aware St Patricks day is not to far away! It is quite a big deal in my household because my husband-to-be is in fact from the North of Ireland, so we always try and do something to celebrate the day. Also to get in the Irish spirit assume everything I have written is said in an Irish accent...

I have really been getting into my baking recently, particularly cupcakes...I'm kinda (very) obsessed with cupcakes. So in order make the day special for my hubby I have chosen to create Irish Cream Cupcakes. This isn't a kid friendly cupcake as there is alcohol in the icing but I'm sure you could make a non-alcoholic version...but for the sake of this's Adults only! I have also decided to do a vanilla cupcake as requested by the Irish man, but you could also do a chocolate version.

St Patricks Day Irish Cream Cupcakes

Vanilla Cupcake:
- 1 cup plain flour
- 3/4 cup raw sugar
- 1 teaspoon baking powder
- 1/3 cup unsalted butter (slightly melted)
- pinch of salt
- 1/2 cup milk
-  1 egg
- 1/2 teaspoon vanilla extract.
- A few drops of green colouring

Irish Cream Frosting:
- 1 cup butter
- 3 cups icing sugar
- 4 tablespoons Baileys Irish Cream
- 2 table spoons vanilla extract

  • Start by preheating the oven to 170C.
  • Grab your cupcake tray and pop in your cupcake liners (preferably stick with the theme).
  •  Mix together the flour, sugar, baking powder, salt and butter using a electric mixture. Blend until it becomes a sandy consistency. Once all the ingredients are combined slowly add in half of the milk and mix well. 
  • In a separate bowl add the egg, vanilla extract and remaining mix and which until they are all nicely blended together. 
  • The the wet mixture in with the dry ingredients and use to electric blender to incorporate it all together. Make sure to mix all the left over ingredients which may be caught on the sides/bottom of the bowl. Once the mixture is complete, add a few drops of green colouring and blend once again until you have a nice green bowl of cupcake mix.
  • Spoon the mixture into the cupcake cases so they are about 2/3 full and then place in the over for about 20-25 mins or until the cake bounces back when you press down on it. 
  • Once the cupcakes are ready take them out of the oven and place of a drying rack to cool down.
  • Now for the icing. Start by blending the butter with an electric mixture until is makes a nice creamy consistency. 
  • Then add in the icing sugar, Baileys and vanilla extract and blend blend blend until nice and thick.
  • If you have an icing piper, put your icing in there and pipe away. 
  • Side note...always wait for the cupcakes to cool down completely before you put the icing on them...learn form my mistakes...I once had make cupcakes surrounded in icing goo...not cool...
  • Enjoy! Yummmmmmmm
The thing I love about cupcakes is that you can personalise them for whatever occasion you have created them for. For St Patricks day I got the green colouring from the supermarket to make my cupcakes a nice shade of Irish green, then I went to Lombards and found green cupcake cases and little Irish flags to put in the icing. 

So there you have it, Irish Cream Cupcakes just in time for St Patricks Day!
