Pumpkin Spiced Cookies

Halloween is only a few sleeps away so I decided to do some Halloween baking! After much umming and ahhing, I decided on Pumpkin Spiced Cookies! I have never made these before and I once made a pumpkin pie which was a complete fail so I was aliterate nervous about it. But I gotta say...these cookies are the BOMB DIGGITY! They are soooo good! So I thought I'd share the recipe and a few pics of my cookie adventures!

Ingredients:

2 1/2 cups white flour

  • 1 teaspoon baking soda
  • 1/2 teaspoon ground nutmeg
  • 2 teaspoons ground cinnamon 
  • 1/2 teaspoon cloves (ground)
  • 1/2 teaspoon salt
  • 1/2 cup butter softened
  • 1 1/2 cups white sugar
  • 1 cup pumpkin puree
  • 1 egg
  • 1 teaspoon vanilla extract
  • Icing:
  • 125g butter 
  • 4 cups icing sugar
  • 1 cup milk
  • 1 teaspoon vanilla extract



Mix the dry ingredients together and give it a good stir!


In a separate bowl mix all the wet ingredients and sugar together and blend it nice gooood!


Add in the pumpkin purée and give it all a good blend!


Pop little balls on mixture on a pan and pop into a preheated oven (175c) for 15 minutes!


For the icing blend all the ingredients together until you are happy with the consistency.


I could not find orange colouring so I did some colour maths and red and yellow maaaaaake....ORANGE! Pop the colouring in with the icing and blend Neil evenly spread.


To make my pumpkin stems I chopped up some lollies but feel free to decorate however you want!


The photos don't so it justice but these taste seriously yummy! So if you're suck on an idea for Halloween baking, give these a go! They will not disappoint!!
